Dinner December 15th to December 25th

Here are the main dishes we are having the next 10 days. The girls are out of school starting Friday and I want to spend time doing crafts like making snowflakes from popsicle sticks and a candy cane wreath and not going to the grocery store. So I will make a bigger then normal trip tomorrow and be set for 10 days. Then I will just have to go get some fruit and probably milk the middle of next week.

Penne Pasta bake (new recipe, but it looks super yummy and the recipe says a batch makes 2 so I will have one for the freezer. A big plus)

Crockpot Italian Chicken:
4 chicken breasts,
1 packet Zesty Italian dressing seasoning,
1 8 oz. cream cheese (softened),
2 cans cream of chicken soup;
Cook on low for 4 hours. If sauce is too thick, add a little milk. Serve over pasta.

Crockpot Orange Chicken
Ingredients:
• boneless chicken breasts, chopped into small chunks
• 1/3 cup flour
• olive oil
• 1/2 T salt
• 1 teaspoon balsamic vinegar
• 3 T ketchup
• 6 oz. frozen orange juice concentrate (thaw or throw it in the microwave for 45 seconds)
• 4 T brown sugar

*In a bowl, mix the orange juice, brown sugar, vinegar, salt, and ketchup.

*Pour the flour in a small bowl.
*Cover the chicken breast chunks in flour and shake off the excess.
*Pour a small amount of olive oil in a skillet and brown the flour-covered chicken. The chicken doesn't need to be fully cooked since it's going in the After the chicken is done cooking, pour the pieces into the crock pot.
*Then cover the chicken with your sauce mixture and give the pot a stir.

*Cook on low for 5-6 hours or on high for 2-3.
Serve over rice

Crockpot Ravoli
25 oz bag of frozen ravioli (we like cheese)
1 jar of your favorite spaghetti sauce
1 cup mozzarella cheese

Dump your bag of frozen ravioli right into the crockpot
Pour your jar of sauce over the ravioli.
Stir the ravioli to evenly coat with sauce.
Cover and cook on high for about 3 hours. Depending on how fast your crockpot cooks, you may notice they are done closer to 2.5 hours. You could also cook on low for a longer period of time.

About 20 minutes before you are ready to serve, sprinkle the top of the ravioli with finely shredded mozzarella cheese. Pop the lid back on and let it melt- about 20 minutes.

More Crockpot

Sweet Shredded Pork
1-10 lbs Pork tenderloin roast ( any pork roast will work)
2 cans of Tomato sauce 15 oz
1 1/2 cups brown sugar
1 can of coke or Dr Pepper
1 clove garlic diced
1/4 cup cilantro minced
Add your meat to the Crock pot, I think it taste best if you use about 5 lbs….I did it with 8 lbs and the flavors were not as bold as I would have liked them. But the Recipe says you can use up to 10lbs so it is all a matter of taste. Add your Tomato sauce, brown sugar, and garlic.Add can of soda, and cilantro. ( If you do not want to cook with soda I guess you could use broth instead)Put the lid on your crock pot, cook over Medium Heat at Least 4 hours. ( you can cook longer)Once tender and pulls off easily with a fork, take out of liquid and shred with a fork.Once Pork is shredded, return to liquid.Eat on tortilla, with rice, black beans, cheese, tomatoes, lettuce and Cilantro Ranch.

Cilantro Ranch (yummy with all tacos, chips, s a dip)
You will Need:

1 pkt Hidden Valley Ranch Dressing Mix
8 oz can Salsa Verde Green Salsa ( come in a can)
1/2 Bunch of cilantro with stems ( washed)
2 cloves garlic chopped
1/4 cup Mayo
1/4 cup sour cream
1/8 teaspoon Hot Sauce
Put all ingredients in a blender, and mix till smooth and creamy….add buttermilk to thin if needed. It will be thin a first and thicken up over time. So I always thin it down a bit. If you do not have buttermilk, normal milk works just fine. This is great on tacos, salads, Chip dip….love it!

Pineapple CHicken
4 chicken breast
1 can pineapple tidbits
2 tbsp soy sauce
2 tbsp dijon mustard
1/4 tsp minced garlic
Place chicken in greased crockpot. sprinkle with pepper in seperate bowl mix pineapple, soy sauce, mustard and garlic pour over chicken. cook on high 3-4 hours or 7-9 on low.

Carmel Rolls
2 packages 8 ounces each refrierator bisquits
1/4 cup melted butter
1/2 cup brown sugar
1/2 tsp cinnamon

mix sugar and cinnamon together in small bowl. Dip indivdual bisquits into melted butter and then into cinnamon sugar mix. Place each covered bisquit in greased 3.5 to 5.5 quard slow cooker. Cook on high 2.5-3 hours. you can check after 2 hours for doneness.

Triple Rich Chocolate Cake
1 box devils food cake mix
4 eggs
1 cup sour cream
3/4 cup veggie oil
1 cup water
1 package instant chocolate pudding
1 cup chocolate chips
Combine all ingredients in a bowl. Pour batter into greased 3.5 to 5.5 slow cooker. Cover and cook on low for 5-6 hours or until center is done. DO NOT COOK ON HIGH

More Crockpot

Taco Soup
2 chicken boneless skinless chicken breasts
2 cans Ro-Tel (I like the lime & cilantro, but the regular is fine)
1 can black beans, rinsed and drained
1 can kidney beans, rinsed and drained
1 can corn
1 onion, chopped
2 cans low-sodium chicken broth
1-2 cups of water
1 Tbsp garlic powder*
1 Tbsp chile powder*
1 Tbsp ground cumin*
1 Tbsp dried cilantro*

tortilla chips
sour cream
shredded cheddar or Mexican blend cheese

*Instead of these spices, you could include a packet of Taco seasoning if you prefer.*

Put chopped onion, cans of beans, rotel, corn, chicken broth, water, and spices in CrockPot and stir to mix. Put chicken breasts on top of mixture and make sure they're at least partly submerged in liquid. Cook on high 6-7 hours or low 8-9 hours. Before serving remove the chicken breasts from soup and shred, if needed, (sometimes they'll just fall apart on their own, but sometimes they need some help). Return chicken to CrockPot, stir to combine.

To serve put a few tortilla chips in the bottom of a bowl, ladle soup over tortilla chips, top with shredded cheddar cheese, (today I used the Kraft Mexican blend and it was yummy), and a dollop of sour cream, serve with more chips if you like. Enjoy!

Pizza Chicken
4 chicken breast
1 green bell pepper seeded and sliced
1 small yellow onion
1 jar pizza sauce (14 oz)
4 cups shredded mozarella cheese
pepperoni

Put Chicken in crockpot, add bell pepper and onion, add pizza sauce, put pepperoni evenly over sauce. add lots of cheese. Cover and ccok on low about 6 hours.

BEEF STEW
5 cups chopped veggies, potatoes, carrots, onion, celery bell pepper
3 cups water
1 package beef stew seasoning
2 pounds beef stew meat cut into 1 inch pieces

Combine all the stuff cook on high 5 hours or low 7 hours or until beef is tender.

Some favorite crock pot recipies

My cousin just got a crock pot and requested thatI put some more crock pot recipies on here so I am going to post some of our favorites this week. I hope she enjoys them as much as we do.
SWEET AND SPICY CHICKEN:
*Note: If you don’t want the finished shredded chicken mixture to be quite as “wet”, slightly drain the tomatoes before using them. Also, I nearly always double or triple this recipe because it freezes so well.

1 pound (about 2) boneless, skinless chicken breasts
1 (14-ounce) can petite or regular diced tomatoes, undrained
1/3 cup brown sugar
1/4 teaspoon crushed red pepper flakes (add more if you like extra heat – with this amount it is mild enough for my kids to eat it up but spicy enough to help offset the sweetness)

Place the chicken in the bottom of the slow cooker. In a small bowl, combine the tomatoes, brown sugar and red pepper flakes. Pour over the chicken. Cover the slow cooker and cook on high for 4-6 hours or on low for 8-9 hours. Remove the chicken to a cutting board and shred with two forks. Return to the slow cooker and mix the chicken with the juices from the tomato/brown sugar sauce. Season with salt and pepper to taste. Serve in flour tortillas or over tortilla chips with toppings of choice: lettuce, sour cream, cheese, avocados, etc. Sometimes we also eat it just on hamburger buns or hogie rolls. Either way its super easy and yummy.

* This is a great Freezer Meal: I freeze the leftovers and let thaw in the refrigerator overnight before serving the next day. Reheat and serve. Easy!

CHILI
1 pound ground hamburger(sometimes i cook it sometimes i don't)
1 can stewed tomatoes
1 can pinto beans
1 can kidney beans
1 can black beans
1 can chili beans
1 package of chili seasoning.
add all ingredients to crock pot. cover and cook on low for 6-8 hours. serve with cheese on top and corn bread.
This makes alot. I always can get 2 meals out of it so i freeze half when its done cooking and then the next time we have it with chili dogs or chili fries.

CHICKEN AND RICE
2-4 frozen boneless skinless chicken breast
1 pkg. (8 oz.) cream cheese (let sit out to soften)
1 can cream of chicken soup
1 pkg. italian dressing seasoning (the dried kind in the packet)
rice

stir the cream cheese, cream of chicken, and seasoning together in the crockpot. i actually start it on low and let them sit in there for about 30 min so the cream cheese is softer to stir. put the frozen chicken in and cover with the mix. cook on high 4-6 hours or until the chicken is cooked and fall-apart-tender. after the first two hours when the chicken is softer i cut it up into strips for easier eating. how easy is that!?

cook the rice in a pot and smother with chicken mixture! the italian seasoning is the secret ingredient!

Freezer hashbrowns

Last night one of my regular customers came in and said she was just on her way to get potatoes from the store becasue she was spending today making hasbrowns for the freezer. Our grocery store has a 15 pound bag of potatoes on sale for 78 cents!
So today i googled how to do it, took a bag of potatoes we had used half of and made me some hash browns.
First I scrubbed all the potatoes
Then I put them in the oven at 350 for an hour. But check them after 45 minutes or so. I had small potatoes so I kept checking so they wouldn't get over done.
Once cooked, you need to cool them. I put mine in the fridge for a couple of hours. then I used a knife to peel them. Once they were peeled I shredded them. Be careful, they are soft and break. I shredded half of the potatoes put them in the freezer on a cookie tray and when they were frozen i put them in a freezer bag, got all the air out and now i have shredded fresh hashbrowns.
With the other half of the potatoes i chopped them. I like chopped hashbrowns better then shredded when I make cheesy potatoes. But I did the same things with the cubbed as with the shredded. The potatoes are in gallon size freezer ziplocks and I made 12 of them. So for less then 1.00 I have enough hashbrowns to last me a few months. It was easy and something I will do again. Beats spending 2.00 or more on one bag at the store.
I know, not many pictures my camera won't take good pictures anymore. Not that the ones I posted were good but they are better then the other ones. There are other ways you can do them, like boiling the potatoes but this just seemed the easiest.

Utah

Next Friday we are going to Utah. We are leaving about 3 in the morning and we will come back on Sunday. Its going to be a super short trip but I am excited to see my family. My dad has some trees he wants to have Danny cut down so we are going to help. The girls don't know we are going. It will be a fun surprise. Especially for Emily. She loves going to Utah. She misses it as much as me.

Egg Bake

I can not for the life of me figure out how come sometimes blogger will let me link things and sometimes it won't I am not doing anything different.
Anyway I was looking on her blog last week and Hailey saw this and wanted me to try it. We did it today. I am usually not a fan of eggs cooked like this but it was yummy.
Items Needed:

•1 tube refrigerated crescent rolls
•8 eggs (I used 9, its what I had and why leave just 1 egg?)
•1/2 cup milk
•Mix-ins (I used ham and i cooked bacon yesterday)
Shredded cheese
•Salt/Pepper to taste
•cooking spray
Begin by preheating your oven to 350°F. In a 13 x 9 pan lightly spray it with cooking spray. Open the crescent roll tube and unroll it and spread the dough across the bottom of the pan being sure to patch any holes in the dough.

I scrambled the eggs and the milk. Then I added my bacon and ham and mixed it in with the eggs. Then I poured it over the cresent rolls. Then I topped it with alot of cheese.
Cook for about 25 minutes. Check it after 25 it may need another minute or 2.
The girls loved it and want me to make it for dinner tonight. To bad I am not. At least there is some left over that they can eat for a snack after school.

crockpot lasagna

Today I made this. I got it from crockpot365.blogspot.com (n i don't know why it won't link it. I keep trying)
1 pound lean hamburger. browned and grease drained.
1 (28-ounce) jar prepared pasta sauce
25-30 frozen cheese or meat ravioli (I used gluten free; please mind labels!)
2 cups shredded cheese (I used Italian blend-- mozzarella, parmesan, etc)
2 tablespoons warm water


Use a 4-quart slow cooker. After browning the meat in a skillet, drain well and add the pasta sauce (save the jar!) to the meat in your saute pan. Stir to combine.


Scoop a large spoonful of meat sauce and spread into the bottom of an empty slow cooker. Add a layer of frozen ravioli. Then add another layer of meat sauce. Continue layering until you run out of ravioli and sauce. Sprinkle cheese evenly all over the top.


Put 2 tablespoons of water into the empty pasta sauce jar, and shake. Pour this water over the top of your "lasagna."


Cover and cook on low for 6-7 hours, or on high for about 4. Your lasagna is done when the pasta on the ravioli is tender and the filling is heated through.

*My notes, I wish I would have had 2 packages of ravoil. I had a lot of exra hamburer sauce i would have liked to have made another layer with. Oh well. Its starting to smell yummy.
i was able to get 2 layers out of 1 package. maybe my crockpot is just bigger then the one she used? it was really easy to make and probably took 15 mintues from start to finish and I only had 2 dishes to wash. Having a green salad and french bread to go with it.

Sour Cream Enchalidas

This is a recipe that I like alot.
Ingredients:
4 or 5 boneless, skinless chicken breasts
1 can Cream of Chicken Soup (10 3/4 oz)
4 medium cans diced chili's
1 15oz Sour Cream
1 large block Pepper Jack Cheese
2 Cups Fiesta Blend Shredded Cheese
10 flour tortillas
1 Tbsp. Cummin Seasoning
1 small yellow onion (optional)
1/2 cup skim milk
1 Tbsp Garlic Salt ( to boil chicken in)

Preheat oven to 350. Boil chicken breasts in water and garlic salt. Shred cooked chicken and sprinkle with Cummin seasoning. In a medium sauce pan, mix chili's, cream of chicken soup & sour cream. Gradually add milk to thin the mixture. Simmer on low heat. Layer each tortilla with 1 tbsp. of the soup mixture, shredded pepper jack cheese and chicken. Roll and place in single file rows in a 13 x 9 inch baking dish. Use the remaining soup mixture to cover the tops of the tortillas. Top with shredded fiesta blend cheese and bake covered for 35 min. Remove from heat and cool 5 min. before serving.

Maggie on her first day of big girl Preschool

Maggie started Big Girl Preschool last week. She loves it. She goes 3 mornings a week for 2.5 hours a day. So far, all the things that Maggie has brought home have been fun projects and I think she is learning alot which makes it easier for me to pay the 150.00 a month. In Utah the other girls went to a great preschool for the same amount of hours and it was only 65.00 a month. We loved Miss Kristy. Mrs. Scholes Maggies new teacher seems just as great. And Maggie has 3 friends from church in her class too.

From Freezer to crockpot

I was on www.thekrazycouponlady.com and she had posted some easy freezer meals that you can just throw in your crockpot. And since i had just bought 5 pounds of chicken this morning and I had everything here at home to make them I did. It took me about 30 minutes, there was no mess to clean up except for 1 measuring cup and a garlic press. i mixed everything in the bag and then added the chicken. I added 4 breasts to each bag.
Now on a day that I don't have dinner planned I will just throw these in the crockpot and be done with dinner for the most part. just cook up some rice or noodles and a veggie (I am thinking steamfresh veggies for an even simpler dinner and 10 minute boil in bag rice)
* next time i make these kinds of food, I am going to buy the reynolds crockpot liners and put all the stuff in the liner and then put it in a freezer bag. Makes clean up a breeze.*
So, I hope you enjoy the recipes.


Beef Pepperoncini Sandwiches (my version on a French Dip)

•2 lb Chuck Roast
•16 oz Jar Peperoncinis
•1 Good Seasons Italain Seasoning Packet
Add all three ingredients into a Gallon Size Freezer Bag and put in freezer. When you are ready to cook this, put all ingredients into crockpot and let cook for 8 hours on low. Once the meat is cooked, shred it and serve on rolls or hogies with swiss or provolone cheese. YUM!

Brown Sugar Chicken (Don’t Judge me)

•Boneless, Skinless Chicken Breasts, I did 4
•1 cup Brown Sugar
•1/4 cup Sprite (I will add this once I add everything to the crockpot)
•2/3 cup Vinegar
•3 cloves smashed and chopped garlic
•2 Tablespoon Soy Sauce
•1 Teaspoon Black Pepper
Add all ingredients to Gallon Size Freezer Bag, except for the Sprite. When you are ready to cook this, put all ingredients into a crockpot, add the sprite and let cook for 3-4 hours on high.

Honey Garlic Chicken

•Boneless, Skinless Chicken Breats, I used 4
•3 Garlic Cloves, smashed and chopped
•1 Teaspoon Dried Basil (I used Fresh)
•1/2 cup Soy Sauce
•1/2 cup Ketchup
•1/3 cup Honey
Add all ingredients to Gallon Size Freezer Bag. When you are ready to cook this, put all ingredients into a crockpot and let cook for 3-4 hours on high.

BBQ Chicken

•Boneless, Skinless Chicken Breats, I used 4
•Chopped Green Pepper
•Chopped White Onion
•BBQ Sauce, I used Sweet Baby Rays (but use whatever you have in your stockpile)
Combine all ingredients in a Gallon Size Freezer Bag. When you are ready to cook this, put all ingredients into a crockpot and cook for 3-4 hours on high.

Veggies in a Bag

•Chopped Onion
•Chopped Banana Squash
•Chopped Red Potatoes
•Chopped Green Pepper
•Garlic
•Fresh Basil
Put all ingredients in a Gallon Freezer Size Bag. When you are ready to cook this, cook the veggies by themselves (if you are going to Grill Meat) or add meat to the crockpot as well.

Its quiet

Well, today Hailey, Emily and Abby went off to school. Maggie will start pre school tomorrow.
The house is quiet. I said to Maggie this morning I miss your sisters. She said :Me too, but good news mom your with me and not alone. She is so funny.

Abby is in 1st grade, Emily is in 2nd and Hailey is in 4th.
I was worried about Abby because she is really clingy but she did great. She went to her room, found a desk and then she just wanted to go out and play. Emily was the one that was a little shy. But she will be fine. Hailey was great. She got the teacher she wanted, her best friend Lexi is in her class so didn't even want me to walk her in.

Smoothies

The girls get to go to school Tuesday. Today I made a ton of pancakes to put in the freezer. Yesterday I made a loaf and a half of french toast to put in the freezer, and today i made them smoothies.
This is 2 cut up bananans
Then I added 2 cups of frozen berries

I added 4 table spoons of vanilla yogurt. (and a few pinches of spinach, I had to add that quick cuz little girls were in the kitchen)

Half a cup of quick oats (not the instant kind)


2 cups of apple juice. you can also use milk. I also poured in some honey.

Then you blend together.

Then I put them in little cups like this and i am going to put them in the freezer. Pull them out in the morning, add to the lunch box and the girls have a healthy drink.


Lima Bean Wreath

I saw this idea on another blog this morning and I thought that looks easy. We went to the dollar store and got the wreath, got the lima beans and paint at walmart. this is what i did:

then i took glued the beans. I started with the inside first. Try and do one edge first, getting the beans as close to the edge as you can. then when your working, keep the beans as close together as you can. I wish mine would have been a little closer.

Half way done. It took me about 2 hours to glue them all on. I turned on Mad About You Season 1 and watched that too.


then you can spray paint it. I did mine orange for Fall. The blog I saw them on had lots of different colors. So just whatever you want.
And that is all.
I hung mine in my entry way, however you can also hang them on your front door. Some I have seen also have the first letter of their last name. I don't have the stuff to do that so I won't. (for now)
This was a pretty easy project. One anyone can do. It was pretty inexpensive to make also. And I am going to try and make a pumpkin from dryer vent and I will spray it orange too so I don't feel bad spending 4.00 on a can of spray paint i may never use again.

September 1st

I can't believe that it is September 1st already. My how the year is flying by. The girls start school next week and I will have 3 mornings a week to myself. Maggie will be going to school from 9-11:30. How nice. with my time, I plan on actually keeping up on laundry, the grocery shopping, the house being a little cleaner and I am really going to try to meal plan better.

We had a fun summer. Andrew came for 6 weeks, Kim and Kevin came for a week over the 4th of July, we went to the lake and parks with friends, IN August we went to 7N Ranch Resort for my family get together. We went to the Idaho Falls Zoo, we went to Heise Hot Springs, we went on a hike, and more. Then Hailey and Emily went back to Utah with my parents for 13 days. We picked them up in Island Park when we went to Yellowstone for a week with Dannys Family. We did Yellowstone park 4 days, went to Mesa Falls one day and we went to the Grizzly Bear discovery center and West Yellowstone one day. Our cabin was nice. The weather was nice. The company was nice too.

Now it will be fun to get back into a schedule.

The first week of July was a busy but fun week.
On the 2nd my Sister Kimberlee came to visit with her Husband Kevin and their girls Kanyon and Kallie. It was so much fun to have them here.
We went to a demo derby
We went to Coeur D Alene Fourth of July celebrations. We got to downtown CDA at 9 in the morning. Spent the whole day there. We did Paddle boats, we went to the longest parade ever, we went to the park, we played in the water, we played at the park some more, we watched fireworks, we spent and hour and a half getting home.

2 years

Today I realized this is the 2 year anniversary of the day that Danny and Emily left our house in Utah and drove up to Idaho for his new job. Maybe that is why I have just had a blah kinda day. Saturday will mark the 2 years that Hailey, Abby and Maggie and I left. I am still sad. I still am not 100% happy here. I miss my family every single day in Utah. I miss my friends and I miss my old job. I don't think there is ever a day when I don't want to go back. My sisters ask me all the time, when are you coming back? I wish I could tell them I am.
Someone told me not that long ago that the home sickness is supposed to go away after 6 months, well I am way past that and I am still waiting. (i still have some boxes in the garage I have not unpacked, and I just in May pulled out a box of pictures and frames. My walls are starting to not be so bare)
Having my brother here since the end of May has helped. But as the time gets closer for him to go home the sadder I am getting. And then I get happy when I think of one of my sisters and her family coming on Saturday and spending a week here. And then my mind goes to the day they have to leave and take Andrew home with them and the mess that I am going to be that day. I know that I will get to see them less then a month after that for our family vacation but after August 7th, I don't know when I will get to see any of them again.
I am trying to get Brendan to come up. Either meet someone half way on July 10th with him or have him come back with us after our trip to Southern Idaho and then return him to Rexburg or Idaho Falls before we go to Yellowstone for a week.
Anyway, I can't believe that its been 2 years.

uiet, don't tell anyone. I can't believe how much popcorn is. Maybe next week we will get popcorn. Todays movie is Megamind .
9th movie is free. To bad we won't be able to make 8 movies since we will be gone some weeks. Oh well. The kids like coming and we bring our own candy. Q
Took the kids to Regal Theatre this morning. They have 1.00 movies on Tuesday and Wednesdays. Plus we got a movie passport so if we come to 8 movies the

Fishing

Last week we took the kids fishing to a little pond by our house.
Abby and Andrew were the only ones who caught fish.
