Menu plan march 28-april 2

here is this weeks dinner menu
Monday Chili in the crockpot and corn bread
Tuesday italian chicken in the crockpot, cheesy potatoes, steamed broccoli.
wednesday bbq hamburgers and hot dogs, pasta salad, corn
Thursday tacos and white rice.
friday probably grilled cheese and top ramen. i will be gone canning and danny will be here with 6 kids.
Saturday bbq steak and chicken, baked potatoes, peas.

Report Card Time

The girls are out of school this week for Parent/Teacher confs. We had Abbys yesterday and she is doing much better this semester. She got all +'s. When we went for her 1st semester chat with the teacher she was doing ok. Liked to play by her self and wouldn't talk to anyone. And she didn't like going to school. That made me sad. She was so excited to go to kindergarten. What a differance this time, she likes to go to school, her teacher said she was interacting with the others, went to center time now, and is doing excellent. Good Job Abby.
Emily- Still advanced for her grade. I mentioned to the teacher she says she is bored all the time at school and he said he can see that and is going to find some work to challange her. He said she flies through everything he gives her and gets 100% on everything she does. She has never missed one spelling word all year. Hopefully the next couple of months she keeps up the good work and gets challanged a bit more. Awesome Job Emily.
Hailey- Ever since kindergarten we have heard the same thing from Haileys teachers, Hailey is so sweet. She is so quiet. Stays on task, does what she is asked, neve raises her voice. WHAT?? We can't be talking about the same Hailey. My Hailey is loud, she is out of control at home, she screams, she runs, she doesn't like to listen to me. But yep we are talking about the same girl. Hailey got straight A's this time. Last time she had a B in reading but got that up to an A. So good job Hailey.
All 3 girls are doing great.

Menu for March 14-19

Here is what I plan on cooking for dinners this week:
Monday
Penne Pasta
homemade alfredo sauce
steamed broccoli
jello

Tuesday
Cafe Rio like Pork tacos and white rice.
1-10 lbs Pork roast
2 cans of Tomato sauce 15 oz
1 1/2 cups brown sugar
1 can of coke or Dr Pepper
1 clove garlic diced
1/4 cup cilantro minced
add meat to crockpot.
then add tomato sauce
brown sugar
garlic
soda and
cilantro on top.
cover and cook on medium for at least 4 hours. Shred chicken and return to liquid. cook just a litle longer.
Eat on tortillas with sour cream, cheese, lettuce, tomato
(i usually make this with chicken but I have 3 pork roasts in the freezer already, either way its good)


Wednesday
Breakfast- ham and cheese omlets, bacon, homemade bisquits and fruit smoothies

Thursday
Spaghetti
texas toast
green salad

Friday
Italian chicken
butter noodles
green beans

chicken ranch pizza

This was what we had for dinner tonight. Its kinda like Papa Murphys bacon ranch pizza. I added bacon to mine. Danny didn't want this kind so he made one with pepperoni and chicken. Then when mine was done and he had a bite he wished he would have made a ranch chicken bacon pizza. It was even better cold. I made a home made pizza dough for mine but you can use any pizza crust you want.

2-3 chicken breasts
1/2-3/4 cup Ranch dressing (I use homemade)
2 cups mozzarella cheese
1 1/2 cups chopped Roma tomatoes
1/4-1/3 cup green onions
1-2 cups cheddar cheese

Cook and shred chicken. Divide crust in half and roll crust out on greased cookie sheets that have been sprinkled with cornmeal. Poke holes all over the crust with a fork. Bake at 425 for 7 minutes. Spread dressing over crust. Sprinkle mozzarella, then tomato, green onions, and chicken. Top with cheddar cheese. Bake 15 more minutes or till crust is lightly browned and cheese is melted.

Creamy Chicken Taquitos

We had these for dinner on Wednesday and they were so so good. I made 20 and that was not enough for my family of 5. (abby would not eat them)

Baked Creamy Chicken Taquitos

1/3 cup (3 oz.) cream cheese
1/4 cup green salsa
1 Tb fresh lime juice (1/2 lime)
1 tsp chili powder
1/2 tsp cumin
1/2 tsp onion powder
1/4 tsp granulated garlic
3 Tb chopped cilantro
2 Tb sliced green onions

2 cups shredded chicken
1 cup grated pepperjack cheese

fajita size flour tortillas (or small corn tortillas)
cooking spray
kosher salt

Soften cream cheese in microwave for 20-30 seconds. Stir in green salsa, lime juice and spices until well mixed then add cilantro and green onions. Stir in shredded chicken and pepperjack cheese and combine well. **this can be made ahead of time and stored in the fridge.

Preheat oven to 425 degrees. Line cookie sheet with Silpat (or tin foil, lightly sprayed with cooking oil).

Working with 3-4 tortillas at a time, briefly heat in microwave so they are more malleable and easier to work with. (Any time you want to heat up flour tortillas, it's a good idea to place a damp paper towel draped over a small stack of them in the microwave. If I have more than 5, I will place a damp paper towel in the middle of the stack as well.) Spoon 2-3 Tb of mixture in a row across the bottom third of tortilla, keeping 1/2 inch away from edge. This makes it possible to roll it up very tightly. Place taquitos seam side down on cookie sheet, making sure they are not touching. Lightly spray with cooking spray and sprinkle with kosher salt. Bake for 15-20 minutes or until crisp and edges start to turn golden brown.

flip flops

Today it is sunny. And its going to be warm. Well like 50. I broke out the flip flops. I painted my toe nails. I love flip flops. I love that the sun is shinning. Starting tomorrow at work flip flops are buy 1 get 1 half off. I am excited. Abby and Maggie and I were in Walgreens on Thursday and you should have heard Maggie scream with exciment over Strawberry Shortcake flip flops. Guess what Maggie is getting for Easter? Yep Strawberry Shortcake flip flops. They even have cuter flip flops this year for me.

Mighty Awesome Meatloaf

Last night for dinner was meatloaf, baked potatoes, green beans and jello.
I tried a new meatloaf recipe and Danny said it was mighty awesome.
1.5 pounds ground beef
2 tbsp worchister sauce
1 cup sour cream
1.5 cups italian bread crumbs
1 packet onion soup mix
1 egg
1/2 cup parmesan cheese

Mix all toghether, put in the shape of a loaf of bread, cover with tin foil. cook 350 for 45 minutes take off tin foil cook 10 more minutes or until done. let sit 5 minutes before slicing.

I don't have a picture because I was at work when it came out of the oven and was gone when I came home. Even Abby ate it so it must have been good.

Easy and trifty meal idea:

Lately, I have been seaching for new dinners for my family. This recipe came from www.athriftymom.com under her menu plan.
Ham Rolls:
Ham slices
swiss or mozzarella cheese
stuffing (cooked according to package directions)
arpicot or peach jelly
and a little water
I used thin sliced ham lunch meat but I am sure that any ham slices will work.
So here is what I did:
i took 2 pieces of ham and overlapped them.
then i cut the swiss chees in half and layed it over the ham
then take the stuffing and put some on the cheese and roll up. (a thrifty mom put the stuffing down first and then put a string cheese on top of the stuffing)
after you get it rolled up, put in a greased pan. I put tin foil down first just to make clean up a little easier.
take your jelly and thin down with water. I didn't measure the jelly or water. I just took some spoonfulls of jelly and added water until i thought it was think enough. pour over the roll ups. when cooking this will create a glaze.


Cover with tin foil and cook at 350 for 25-30 minutes until sauce starts to bubble and cheese is melted.
I am going to serve these with butter noodles. (just egg noodles cooked then some butter and garlic salt.

Maggie hates school

In January Maggie started to go to a preschool on Wednesdays from 9-12. She was so excited. She loved going. The first day she was saying goodbye before I even walked her in. She had so much fun. Then she missed a week when we were in Utah. The next time she went she was crying so bad for me not to go. I left anyway thinking she would be fine once I left. She wasn't. I guess she cried the whole time. I asked her why and she said she just missed me. All last week she was so excited to go to school again. She was asking everyday. Finally it was Wednesday and she got to go to school. She was fine while we were diving and even when we pulled up to school. As soon as we got out of the car, it was just tears. She kept saying she was going to miss me. I told her I would miss her too but she needed to be brave and stay. She stayed and didn't cry as much as the prior week. When I picked her up she said she wasn't coming back.
Well today again she was super excited to go. Then as soon as we got in the car to go the tears came. I took her to the store and told her she could get a treat to have after school if she didn't cry. she said ok and picked 2 airheads. Got in the car to go to school and the tears started, she was screaming she wasn't going. She was crying when I left. I ask her why she doesn't want to go and same answer, she will miss me. She doesn't want to go back.
So should I not take her back, should I keep taking her? What should I do?

Holy pants+ a glue gun= new shorts

Today as I was folding laundry, i noticed that a pair of Maggies pants had a hole in the knee. I have known this hole was there for a while but today it was just to big for her to keep wearing. So, I threw them away. A few minutes later I had a Ha Ha moment.
I went to the garbage and got the pants out. I cut them at the knee, folded them and hot glue gunned them in to shorts. Then I took some ribbon i had in a box and put some ribbon on them. They turned out pretty good. And to wear to the lake with a swimsuit, who is going to notice if the folds are a little uneven? Then with the scraps, i cut a couple of squares, took a pair of Abbys and Haileys pants that have holes turned them inside out and hot glued a patch over the hole in their knees too. I don't expect these patches to last forever but maybe for a few more wearings. And then they will become shorts too. I will post a picture soon.

early risers

Why is it that my kids are such early risers? No matter what time they go to bed they are up at the crack of dawn. And they can't just come out and watch t.v. no that would be to easy. They are up, loud, running around, playing with their toys. I tell them quiet time is until 7:00. They dont listen. And they have their energy all day. Never slow down. I wish I had all their energy.

Abby

For a couple of years, Abby has been getting migraine headaches. Well I took her to the Eye Dr. yestrday and she is a tiny bit near sighted. (is that the one that means she needs glasses to see when she reads?) well anyway she is going to have glasses. She picked out some really cute pink ones. Pink surprised me. Her favorite color is purple. They had all kinds of purple glasses. They had ones with hearts, and stars, and diamons. So So many designs I thought for sure she would get purple with hearts. Well anyway, she tried on about 15 pair and kept coming back to the ones that are plain pink. They are cute. She is so excited to get them. She keeps asking when they will be in. Today we had to write on the calander the day they are supposed to come in. We will see how she does when they arrive. She only has to wear them when she is reading or doing homework.

update

Here goes:
March has already been a busy month. And it's only the 4th.
On Wednesday night Maggie wanted to take her cough medicine which dad would not get for her. So she decided to climb onto the counter and get it herself. Well,she slipped and fell right onto our tile floor. (I was at basketball practice with Emily). So when i get home, Maggie is crying and whining and laying around. Not normal. Then she started throwing up. So we call her Dr. who says yes, we need to take her to the ER. MAggie and I get to the ER and we are seen right away. Dr. sees Maggie right away, like even before I could finish the patient forms. Well he checks her out and says he thinks she is fine, didn't see any need to do a CT scan and expose her to the radiation. He says if she keeps throwing up or doesn't act like her normal crazy self bring her back. Oh, he does say she does have an ear infection so we got a prescription for that.
As soon as we get on the freeway to come home, she starts puking in the backseat. Well there is no place for me to pull over and I know that there is a rest stop a couple miles up so I keep driving. I get to the rest stop and I was going to take Maggie to the bathroom to clean her up but I have seen to many Criminal Minds and CSI's and there was a weird looking guy there with a van so i kept on driving.
Got home, got her ready for bed, had her sleep in my room because I had to wake her up every 2 hours and make sure she was ok.
She is. She is her wild normal silly self.
