Menu April 4-9

Here is whats on our dinner menu for this week. I only do Monday to Saturday because we eat with Dannys Parents and Melissa, Kris, Maddie and Ali on Sundays and it never usually isn't decided until Friday or Saturday who is hosting dinner.
Monday
Grilled Philly Cube Steak
beef cube steak
italian dressing
beef broth
bell peppers and onions sliced
cibatta rolls
mayo, cheez whiz
Marinate steaks in dressing for at least an hour. about 20 minutes before your ready to place steaks on grill bring beef broth to simmer in large pot and add sliced peppers and onions. simmer about 15 minutes. drain and keep in covered pot. Grill steaks until well done. slice Cibatta rolls in half. spread mayo on one side and cheez whiz on the other. place cube steak on bottom half and top with peppers and onion.

Tuesday
taco soup in the crockpot

Wednesday Foil Packet Southwestern Chicken Dinner
2 cups minute brown rice uncooked
1 3/4 warm water
4 small boneless skinless chicken breast (about a pound)
1/4 cup ranch dressing
1 1/2 tsp chili powder
1/2 cup shredded cheddar cheese
4 cups small broccoli florets
1 medium red pepper chopped
preheat oven to 400 combine rice and water. let stand 5 minutes while chopping veggies.
spoon rice mixture evenly onto center of 4 large sheets of tin foil. top each with 1 breast sprinkle with chili powder. drizzle evenly with dressing, veggies and cheese. fold tin foil over chicken (making sure all is covered) place packets in a single layer on a baking pan.
cook 25-30 minutes or until chicken is cooked through. place packets on a plate. cut slits in foil and let steam release before opening.

Thursday
Pork chop stuffing bake
1 pkg chicken stuffing
6 boneless pork chops
1 can cream of chicken soup
1 large onion
1/2 cup shredded cheese
heat oven to 350 prepare stuffing as directed.
heat large skillet and cook chops 4 minutes on each side or until browned. move to baking dish. mix soup and onions. spoon over pork chops. top with stuffing. sprinkle with cheese. bake 20 to 30 minutes.
(I have had this recipe forever and never made it. I hope its good)

Friday
Lasagna, french bread, green salad

Saturday
Idaho baked potato soup, garlic texas toast

2/3 cups butter
2/3 cups flour
7 cups milk
4 large paking potatoes baked, peeled and cubed
4 green onions
12 pieces of bacon cooked and crumbled.
1 cup sour cream
in a large pot melt butter, stir in flour, and heat and stir until smooth. gradually add milk stirring constantly until thickened. add potatoes and onions bring to boil stirring constantly. reduce heat and simmer 10 minutes. add bacon and sour cream. top with cheese.
(I love this soup. It makes alot so I usually freeze half)
