Menu Plan

Now that the kids are back in school and I am getting into a routine, I am going to start my menu plan again. I am going to do it every 2 weeks. I may or may not type it up here. It just helps me to have a plan.
I have found a love for Winco. We had one when I lived in California and I have forgotten how much cheaper it is to buy groceries. Even with the 25 minute drive there every 2 weeks I have saved a ton of money. Before I would just go there when I had to be in Spokane anyway but all summer the kids and I have been going every other Friday. The kids love helping my bag the groceries. I don't know what I will do tomorrow when I have to go alone.

bbq hot dogs and homemade potato salad at the park when we are on the lake

Homemade Pizza ( i found the best dough recipe)

1 pot chicken dish.
Monday
Sausage and potato and butter noodles

hamburger helper and garlic toast

homemade egg rolls with crab and chicken wontons

Friday
Mom and dad are going out to eat and put stuff on layaway

BBQ steak

Breakfast, crepes and scrambled eggs

Chicken enchalidas and rice
Tuesday Meat loaf and mashed potatoes
Wednesday
Homemade lemon chicken and stir fry
Thursday Spaghetti with french bread.

I am glad that its March however with all the snow we have outside you would not think it was March already.

Dinner January 9th-Feb 9th

So, I am going to try and meal plan by month this year. I only did main meals and we will be doing Bountiful Baskets this year too. We are going to try and eat healthier this year and Bountiful Baskets is a great way to start. IF you have never heard of Bountiful Baskets, you get about 50.00 worth of fresh fruit and veggies for only 15.00 a week. I have been wanting to do it for a long time and a friend at work does it and she loves it. So I signed up today. Can't wait till Saturday to see what we got. Anyway, here is the meals we are eating.

Menu April 4-9

Here is whats on our dinner menu for this week. I only do Monday to Saturday because we eat with Dannys Parents and Melissa, Kris, Maddie and Ali on Sundays and it never usually isn't decided until Friday or Saturday who is hosting dinner.
Monday
Grilled Philly Cube Steak
beef cube steak
italian dressing
beef broth
bell peppers and onions sliced
cibatta rolls
mayo, cheez whiz
Marinate steaks in dressing for at least an hour. about 20 minutes before your ready to place steaks on grill bring beef broth to simmer in large pot and add sliced peppers and onions. simmer about 15 minutes. drain and keep in covered pot. Grill steaks until well done. slice Cibatta rolls in half. spread mayo on one side and cheez whiz on the other. place cube steak on bottom half and top with peppers and onion.

taco soup in the crockpot

Wednesday Foil Packet Southwestern Chicken Dinner
2 cups minute brown rice uncooked
1 3/4 warm water
4 small boneless skinless chicken breast (about a pound)
1/4 cup ranch dressing
1 1/2 tsp chili powder
1/2 cup shredded cheddar cheese
4 cups small broccoli florets
1 medium red pepper chopped
preheat oven to 400 combine rice and water. let stand 5 minutes while chopping veggies.
spoon rice mixture evenly onto center of 4 large sheets of tin foil. top each with 1 breast sprinkle with chili powder. drizzle evenly with dressing, veggies and cheese. fold tin foil over chicken (making sure all is covered) place packets in a single layer on a baking pan.
cook 25-30 minutes or until chicken is cooked through. place packets on a plate. cut slits in foil and let steam release before opening.

Thursday
Pork chop stuffing bake
1 pkg chicken stuffing
6 boneless pork chops
1 can cream of chicken soup
1 large onion
1/2 cup shredded cheese
heat oven to 350 prepare stuffing as directed.
heat large skillet and cook chops 4 minutes on each side or until browned. move to baking dish. mix soup and onions. spoon over pork chops. top with stuffing. sprinkle with cheese. bake 20 to 30 minutes.
(I have had this recipe forever and never made it. I hope its good)

Friday
Lasagna, french bread, green salad

Saturday
Idaho baked potato soup, garlic texas toast

2/3 cups butter
2/3 cups flour
7 cups milk
4 large paking potatoes baked, peeled and cubed
4 green onions
12 pieces of bacon cooked and crumbled.
1 cup sour cream
in a large pot melt butter, stir in flour, and heat and stir until smooth. gradually add milk stirring constantly until thickened. add potatoes and onions bring to boil stirring constantly. reduce heat and simmer 10 minutes. add bacon and sour cream. top with cheese.
(I love this soup. It makes alot so I usually freeze half)

Menu plan march 28-april 2

here is this weeks dinner menu
Monday Chili in the crockpot and corn bread
Tuesday italian chicken in the crockpot, cheesy potatoes, steamed broccoli.
wednesday bbq hamburgers and hot dogs, pasta salad, corn
Thursday tacos and white rice.
friday probably grilled cheese and top ramen. i will be gone canning and danny will be here with 6 kids.
Saturday bbq steak and chicken, baked potatoes, peas.

Menu for March 14-19

Here is what I plan on cooking for dinners this week:
Monday
Penne Pasta
homemade alfredo sauce
steamed broccoli
jello

Tuesday
Cafe Rio like Pork tacos and white rice.
1-10 lbs Pork roast
2 cans of Tomato sauce 15 oz
1 1/2 cups brown sugar
1 can of coke or Dr Pepper
1 clove garlic diced
1/4 cup cilantro minced
add meat to crockpot.
then add tomato sauce
brown sugar
garlic
soda and
cilantro on top.
cover and cook on medium for at least 4 hours. Shred chicken and return to liquid. cook just a litle longer.
Eat on tortillas with sour cream, cheese, lettuce, tomato
(i usually make this with chicken but I have 3 pork roasts in the freezer already, either way its good)


Wednesday
Breakfast- ham and cheese omlets, bacon, homemade bisquits and fruit smoothies

Thursday
Spaghetti
texas toast
green salad

Friday
Italian chicken
butter noodles
green beans
