angel chicken

here is the recipe for Angel Chicken we had on Wednesday. This came from Kraft food and Family magazine:
4 oz cream cheese softened
1 can cream of mushroom soup (i use cream of chicken)
1/4 cup kraft iralian dressing
1/4 cup dry white cooking wine
1/5 lbs boneless skinless chicken breast cut into bite-size pieces
angel hair pasta

beat cream cheese, soup, dressing and wine with wisk until blended. Put chicken in crock pot and pour sauce over chicken. cover and cook until chicken is done.
My crockpot cooks fast so my frozen chicken was done cooking in about 3 hours on low.
cook pasta. serve with chicken sauce on top of pasta.

menu may 18-25

here is what is on the menu for the week:
Wednesday we had angel chicken, corn on the cob and texas toast
Thursday meatloaf, cheesy potaoes and green beans
Friday breakfast- crepes with strawberry cream filling and eggs
Saturday- pork roast
Sunday- bbq hamburgers and hot dogs, french fries, pasta salad
monday- tacos, refried beans and white rice
tuesday- sausage and potaoe dinner with corn

So thats that. angel chicken is so yummy and super easy. i will post the recipe soon.

Sick

We have had a house full of sick people.
Maggie started it on Thursday night. She was awake all most all night.
We were all fine Fiday and Saturday.
We went to Faiths birthday party on Saturday night.
Early Sunday morning Hailey woke up sick. The problem with her getting sick is she didn't make it to the bathroom. She threw up all over her bed. And then by the time I got to her room she was standing up on her bed puking onto her floor.
Got her all sheets off and in the washer and her to sleep on my floor and I am almost asleep when i hear Abby. She is making weird noises. I get up and she is running to the bathroom. Great. At least she made it.
Get her to bed on our floor. Get almost to sleep when I start to feel sick. Great. Luckily, Hailey pretty much slept the rest of the night but Abby was awake every hour running to the bathroom and I started about 430.
Sunday morning about 9, everyone is better but me. Emily asks for eggs for breakfast, Danny scrambles her some. I go back to bed. Danny is getting out the steam cleaner to clean Haileys bed and carpet when we hear that familar sound we heard plenty during the night. Emily. puking on the living room carpet. That was nasty.
Then she was fine. I slept the entire day Sunday. Monday we are all fine. Tuesday Danny calls me from work, I have to go pick him up he is so sick he can't even drive home. He slept the whole day and Then he was forced to get up when I had to work.
Luckily its Thursday now, we are all better, the girls are happy that last night they had a real dinner. (Danny fixed them cereal and top ramen the past 3 nights) I have sprayed Lysol all over, got all the laundry caught up and hoping we don't get sick again for a long time.
Thing is, Danny and I felt worse we think then the girls did and we both had flu shots. weird.

Enchalida Casserole

I have had this recipe for years. It was on Good Morning America one time. We have not had this in a long time but its easy enough to make for dinner tonight and I have all the stuff. Serving it with a green salad.
Ingredients
Casserole
1 package Doritos (13-ounce), save 2 cups for casserole topping
2 tbsp. onion, grated
1 10-ounce can chili with beans
10 to 15 ounce enchilada sauce
1 can tomato sauce (8 ounce)
1 1/2 cups shredded sharp cheddar cheese
Topping
2 cups Doritos
1/2 cup shredded cheddar cheese
1 1/4 cups sour cream

Cooking Directions
Preheat oven to 375° F.

Crumble 6 cups Doritos with your hands into a large mixing bowl.

Add the onion, the chili, the enchilada sauce, tomato sauce and 1½ cups of cheddar cheese to the crumbled Doritos. Stir with a rubber spatula to combine. Place mixture into an 8½ x 11-inch oven proof casserole dish. Bake for 20 minutes.

Remove from the oven. Spread the sour cream over the top of the casserole with a large spoon or rubber spatula. Top with remaining 2 cups Doritos. Then sprinkle with the 1/2 cup of the cheddar cheese.

Bake for another five minutes and serve.

Maggies Birthday

Sunday we Celebrated birthdays for Ali, Maddie and Maggie.
there was a pinata, yummy food and dessert. Thanks Melissa for hosting.
Maggie needed a new bike and so Kris and Melissa cleaned up an old bike that Ali had out grown and gave it to her. It looks brand new. Thanks also to Michael for helping clean it up. Maggie LOVES it.
